Lions Mane 'Crab' Cakes Recipe


Lion’s Mane 'Crab' Cakes

Ingredients

  • 120g Lion’s Mane mushrooms, shredded
  • 20g Dijon mustard
  • 50g light mayonnaise
  • 50g breadcrumbs
  • Black pepper and salt, to taste
  • 1 tsp paprika
  • ½ tsp ground cayenne
  • 1 tsp mixed herbs
  • 1 tsp chopped chives
  • 2 cloves garlic, grated
  • Juice of ½ a lemon

Instructions

  1. Shred the Lion’s Mane mushrooms into fine strands.
  2. In a bowl, mix the shredded mushrooms with all remaining ingredients until well combined.
  3. Form the mixture into small, firm patties.
  4. Pan-fry the patties over medium heat until golden brown on both sides, about 3–4 minutes per side.
  5. Serve hot, optionally with lemon wedges or dipping sauce of your choice.
