Lion’s Mane 'Crab' Cakes
Ingredients
- 120g Lion’s Mane mushrooms, shredded
- 20g Dijon mustard
- 50g light mayonnaise
- 50g breadcrumbs
- Black pepper and salt, to taste
- 1 tsp paprika
- ½ tsp ground cayenne
- 1 tsp mixed herbs
- 1 tsp chopped chives
- 2 cloves garlic, grated
- Juice of ½ a lemon

Instructions
- Shred the Lion’s Mane mushrooms into fine strands.
- In a bowl, mix the shredded mushrooms with all remaining ingredients until well combined.
- Form the mixture into small, firm patties.
- Pan-fry the patties over medium heat until golden brown on both sides, about 3–4 minutes per side.
- Serve hot, optionally with lemon wedges or dipping sauce of your choice.
